<p>Mettere in ammollo gli anacardi per almeno 4 ore , lavare e tagliare i pomodori a metà, svuotarli della propria polpa con un cucchiaino.<br />
Scolare gli anacardi e frullarli con la polpa dei pomodori e tutti gli altri ingredienti, creando una crema omogenea (unire qualche cucchiaio di acqua se occorre); farcire i pomodori e servire con aromi a piacere , basilico tritato e un filo di olio evo.<br />

<h2>Preparazione &#8211; Crema pasticcera di riso alla curcuma</h2>
<p>In un pentolino unire il latte, lo zucchero, la curcuma, la scorza di limone.<br />
Portare quasi a bollore il latte mescolando sempre nello stesso senso, dopodiché versare a pioggia la farina di riso mescolando energeticamente per qualche minuto, togliere dal fuoco e versare la crema in coppette di vetro o in una pirofila, coprire con pellicola e lasciar raffreddare, una volta raffreddata mettere in frigo.<br />
Servire con farina di carruba o frutta di stagione.<br />

<h2>Preparazione &#8211; Focaccia canapata</h2>
<p>In una ciotola unire le farine , il sale, i semi, mescolare ed unirvi l‘olio, il lievito sciolto nell’acqua con il malto, impastare il tutto creando un composto liscio e non appiccicoso.<br />
Far lievitare per un’ora, coprendo con canovaccio umido; stendere l’impasto su teglia unta di olio evo e far riposare per un’ora e mezza (sempre coperta).<br />
Scaldare il forno a 180°-200°, versare 4 cucchiai di olio evo sulla focaccia e con le mani, facendo pressioni con le dita, spargetelo su tutta la superfice.<br />
Infornare per 25/30 minuti.<br />

<h2>Preparazione &#8211; Spaghetti integrali con ragu di tempeh</h2>
<p>Portare a bollore l’acqua, nel frattempo tagliare il tempeh a dadini piccoli e saltare con olio, pimento e curcuma per qualche minuto, aggiungete la passata di pomodoro e cuocere per 10 minuti a fuoco basso.<br />
Cuocere la pasta al dente, scolarla e unirla al condimento saltandola per cinque minuti, infine aggiungere basilico tagliato grossolanamente.<br />

<h2>Preparazione &#8211; Biscotti alla camomilla</h2>
<p>Mescolare l’ olio di semi di mais, lo zucchero di canna, il lievito, lo sciroppo d’acero e le 2 bustine di camomilla o i fiori essiccati. Unire la farina 0 e 1 cucchiaio di latte di soia. Mescolare e lavorare bene con le mani. Formare delle palline, appiattirle e disporle su una teglia ricoperta di carta da forno. Cuocere a forno preriscaldato a 180 ° per 10 minuti o fino a quando i biscotti diventano dorati.<br />

<h2>Preparazione &#8211; Riso thay integrale delicato</h2>
<p>Pulire e lavare i fagiolini, portare a bollore l’acqua e farvi cuocere i fagiolini per cica 20 minuti (nella stessa acqua cuoceremo anche il riso), nel frattempo in una padella antiaderente unirvi l’olio, lo scalogno tritato, i friggitelli, il tofu tagliato a dadini e le spezie; saltare il tutto per otto minuti e mettere da parte.<br />
Prendere i fagiolini tagliarli a tocchetti ed unirli alle altre verdure; cuocere il riso e scolarlo. Unire il tutto, saltare per qualche minuto aggiungendo la salsa di soia.<br />

<p>Lavare le zucchine, i pomodori, il basilico; ricavate con l ‘apposito pelapatate dentellato gli spaghetti passandolo per il lungo sulla zucchina; frullate pomodori, basilico, pinoli e l&#8217;aglio, aggiungendo un pizzico di sale e l’ olio evo.<br />

<p>Mettere in ammollo i datteri in acqua per due ore (tenere l’acqua di ammollo), privarne dei noccioli e tagliarli grossolanamente, unire tutti gli ingredienti in un mixer e frullare, aggiungendo un poco d’acqua di ammollo dei datteri, creando così un impasto morbido e umido.<br />
Formate delle palline e impanatele nella farina di carruba e altre in quella di cocco, servitele fredde da frigo.<br />

<h2>La carruba</h2>
<p>La carruba è il frutto spontaneo dell’albero del carrubo, i baccelli sono simili a quelli dei fagioli dove all’interno si trovano i semi; una volta essiccati vengono macinati per produrre la farina: in Italia la produzione avviene soprattutto in Sicilia. Ottima per intolleranti ed allergici al cacao, la ricchezza di fibre inoltre aiuta ad abbassare il colesterolo, abbassa i trigliceridi, è ricca di proteine ed antiossidanti.<br />

<h2>Preparazione &#8211; Quinoa di primavera</h2>
<p>Lavare e tagliare a dadini le verdure, far soffriggere con un cucchiaio di olio il trito di scalogno per 8 minuti a fiamma viva.<br />
Lavare la quinoa e scolarla con colino a maglie strette, metterla in pentola con il brodo e far cuocere con coperchio per 15/20 minuti a fuoco basso.<br />
La quinoa sarà pronta quando avrà assorbito tutta l’acqua (attenzione a non farla attaccare alla pentola, deve risultare cremosa). Unire le verdure alla quinoa aggiungendo olio e tamari, servire . (a piacere aggiungere spezie ed aromi di stagione).<br />

<h2>LA QUINOA</h2>
<p>Erbacea annuale originaria del Sud America, erroneamente considerata un cereale. In realtà la pianta è strettamente imparentata con gli spinaci e le barbabietole; non contiene glutine. È pertanto indicata per le persone con problemi legati alla celiachia. Contiene minerali: magnesio, sodio, fosforo, ferro, potassio, manganese, rame, selenio e zinco e piccole quantità di acidi grassi e Omega 3. Vitamina A, vitamine B1, B2, B3, B5, B6, la vitamina C, vitamina E e J.<br />
Lassativa, ha proprietà digestive, abbassa il colesterolo, utile in caso di anemia<br />
È una buona fonte di ferro e contiene vitamina C che ne facilita l’assorbimento da parte dell’organismo. Il ferro apporta benefici ai muscoli e all’attività intellettuale. la sua carenza provoca l’anemia con sintomi che vanno dalla debolezza al mal di testa. Una porzione di quinoa fornisce il 15 % del fabbisogno giornaliero di ferro. Ha proprietà rilassanti, èantinfiammatoria<br />
I semi della quinoa sono ricoperti da una sostanza, la SAPONINA che ha il compito di proteggere il seme dall’attacco degli uccelli. La saponina ha un gusto molto amaro, per questo motivo, prima della loro cottura, i semi vanno lavati accuratamente. La quinoa contiene più proteine di qualsiasi altro cereale e la qualità di queste proteine è molto alta essendo esse complete. Grazie all’alto contenuto di proteine ed amido, la quinoa è un alimento quasi completo. Rappresenta allo stesso tempo una valida alternativa ai cereali classici come grano, granoturco e riso. È un’alternativa anche agli alimenti proteici come carne e latte che personalmente reputo dannosi per la salute se assunti in modo eccessivo.<br />

<p>Privare le fave dal proprio baccello, cuocerle in acqua bollente per cica 15-20 minuti, una volta cotte passarle nel passaverdure creando una crema.<br />
